Spelt

Spelt can boost your mood: Spelt is a good source of tryptophan, an essential amino acid that has a mood-enhancing effect. When we consume tryptophan, it can be converted into serotonin—the "feel-good hormone."
Spelt is rich in nutrients: The high proportion of hull compounds in spelt flour also means it offers a relatively high level of nutrients. Magnesium, for example, is particularly abundant, with at least 114 milligrams per 100 grams. This mineral improves nerve and muscle function.
Spelt can aid digestion: The higher the type number and thus the hull content, the more fiber a flour provides. Even the finest spelt flour therefore contains a relatively high amount of fiber, which aids our digestion.
Spelt can replace wheat flour: Those who are sensitive to wheat flour can usually use spelt flour for baking and cooking without any problems. Although spelt is closely related to wheat, it is generally well tolerated by people with a wheat intolerance.
Spelt is taboo for people with celiac disease: Anyone who has been diagnosed with celiac disease by a doctor is generally not allowed to consume any gluten at all and must therefore avoid spelt flour.
